Paul Newman
Head Chef at Coyaba
Chef Paul Richard Newman is one of the TCI’s most innovate and well-known chefs. He opened Coyaba in 1999, focusing on his unique new world fusion cuisine. Coyaba quickly became an icon on the TCI dining scene and a popular spot among locals and tourists alike. Chef Paul recently re-located the award-winning Coyaba to a creatively designed venue adjacent to the Caribbean Paradise Inn in the heart of the Grace Bay area. Paul is a graduate of Westminster Culinary College, London, England. He apprenticed in Adelboden, Switzerland and then left Europe to launch a career in Caribbean cuisine and restaurants. His first stop was in Bermuda at Marriott’s Castle Harbour, and he followed that with stints at several 5-star resorts such as Little Dix Bay, Virgin Gorda, BVI; Half Moon Resort, Montego Bay, Jamaica; and Coccoloba Hotel, Anguilla. He first opened his own restaurant as managing partner in 1994 at The Royal Stocks at Half Moon Resort, Montego Bay, Jamaica. Following that he worked as Executive Chef/ Manager at the Links at Safehaven, the only 18 hole golf course in the Cayman Islands. He has traveled extensively in the Caribbean doing food and beverage consultancy work in Montserrat, Tortola and St Kitts. Paul is a Founding Member of the Turks and Caicos Chapter of the Chaine des Rotisseurs and an active member of the Caribbean Culinary Federation, American Culinary Association and La Toque Blanche. |
